Fasolakia tsaoulia (green runner beans) recipe

Ingredients:

 1 lb of green runner beans
 2-3 cloves of garlic (chopped)
 1 large onion (chopped)
 1 bunch of parsley (chopped)
 4 medium potatoes
 ½ tablespoon of sugar
 2 cups of canned, crushed or diced tomatoes
 1 tablespoon of tomato paste
 4 small zucchinis, cut into large pieces (optional)
 4 tablespoons of olive oil
 2 cups of water
 Salt & pepper, (to taste)

Heat oil in a saucepan, over medium-high heat. Add the onion and garlic, stir for 3 minutes. Add the green runner beans and continue stirring until onion is translucent, about 3 minutes. Then you add the remaining ingredients. Pour the tomatoes and the water over the vegetables and season with salt and pepper. Cover the saucepan and simmer until potatoes are tender, stirring frequently for about 45 minutes. This dish can be eaten with some salad and bread. Greek lentil soup recipe (Fakes)

Ingredients:

2 1/2 cups of small lentils, rinsed
1 1/2 cup of canned, crushed or diced tomatoes
4 1/2 cups of water
1 medium onion, finely chopped
1/2 cup of olive oil
2 bay leaves
3 cloves of garlic, finely chopped
sea salt
freshly ground pepper

In a heavy bottomed pot add the water, tomatoes, bay leaves, onion, garlic, salt and pepper. Bring to a slow boil over medium heat and add the lentils and oil. Reduce the heat and simmer partially covered for 1 to 1 1/2 hours, or until lentils are done. Remove from the heat, take out the bay leaves. Serve with vinegar on the side, added to taste. Lima Beans or Giant beans (Gigantes) recipe

Ingredients:

500 gr lima beans
1 1/2 cup of canned,crushed or diced tomatoes
2 cloves of garlic
olive oil
parsley
salt
pepper
Optional: carrots

Let the beans soak in water for at least 12 hours. Boil them as long as they need to soften. If you do not soak the beans they will not soften easily. Place the beans in a pot. Spread the tomatoes in the pan. Mash the garlic with a mortar. Add salt, pepper, olive oil, mashed garlic and the parsley. Bake the lima beans for 45 minutes in medium temperature. This dish can be eaten with some salad and bread. You can also serve with feta cheese and olives, two popular Greek table ingredients.

Fasolada (Greek bean soup) recipe

Ingredients:

1 cup of haricot or navy beans
3 cups of water
1 medium onion, chopped
2 carrots, peeled and chopped
2 celery stalks, peeled and chopped
1 cup of canned, crushed or diced tomatoes
1 tablespoon of tomato paste
2 vegetable stock cubes (optional)
Salt and pepper to taste

Soak beans in three cups of water overnight (at least eight hours). You can soak them for longer, but you may need to change the water. Simmer beans on medium-low heat in 2.5 quarts of water for thirty minutes. Add the onion, carrots and celery. Simmer for one hour. Add the tomatoes, tomato paste, vegetable stock cubes, salt and pepper. Simmer on low heat an additional forty five minutes to one hour or until the beans are tender.
